But shortly after I started the recording, just when she was starting to go off, a fucking shusher intervened and interrupted the young couple; they must have then closed the window because things where silent after that... Too bad!

That sounded more like a steam pipe than a shusher. Was anyone else around? She probably thought it was someone shushing her causing them to close the window.
Are you only able to record her through her open window? I was going to say, you could try just outside her door, but then you'd have to figure out the layout of her place (ie; her bedroom might be far away from the door which defeats the purpose).
Hopefully they still keep going so you can get another recording; preferably without someone shushing them again.

With a good handy recorder placed under the door (even if there is not a big gap) he will ear more clearly than under the window. He just have to be patient.

It's true it does not sound exactly as I heard it, but it was a really loud shush that wanted to disrupt things; the recording is amplified before but not for the shush (for saturation reasons).

There are 2 buildings with distinct stairs, it would mean to go lurking in a part of the building where I have no reason to be.
I record with my phone, not the best mic and I can't leave it anywhere, but I don't really wan't to invest in a usb thingy.

You could invest in a pen recorder. It's discreet and no one would suspect it of being a recording device.
I was going to suggest; as you said, you didn't want to be caught lurking, you could plant the recorder on or near the outside of her window and keep an eye on it so that no one is around to discover it, and then just retrieve it later after she's done.
I know. It sounds like I know so much about espionage or something. lol From my experience in the past, this wasn't sex sound recording at the time, I had neighbors that kept stealing shit from people's apartments. I had suspicions of who but I didn't have proof. I decided to secretly record my neighbors and see what any of them knew. I eventually found out who they were and turned them in anonymously. They were arrested and evicted from the apartment building. That's when I knew discreet recording paid off.
